Winter Pea Soup


This is one of my favourite soups ever. It's so quick and easy to make and is so full of flavour. Did I mention its quick and easy to make? You can literally rustle this up in twenty minutes.

Ingredients:
  • 1 packet frozen green peas
  • 1 onion or 4 spring onions
  • 2 tbsn powdered vegetable stock
  • salt / pepper to taste
  • 1 tbsn onion
  • boiling water
Chop the onion / spring onion and fry in the soup pot with the oil for about five minutes. Add the green peas and cover with boiling water. Add the vegetable stock and salt and pepper to taste. Bring the ingredients to a boil and simmer for about ten minutes. Blend the mixture and serve.
