Veggieful

My favourite vegan food blog at the moment is Veggieful.com which is a joint passion-project between Madison Butler and her fiancee Jerome Portland. Madison is responsible for the amazing recipes that you find on the blog while Jerome is the artistic hand behind photographing the delicious food and designing the blog.  The couple also have three rocking Guinea piggies; Pickles, Sherman and Mr Sniffles, who make periodic appearances in her posts. 

The blog is so beautifully crafted and the food so original that you're left thinking "gosh-darnit-to-hell, I wish I had thought of that". For instance, I really wish I had thought of her "Vegan 2 Minute Sticky Date Mug Pudding" which I've literally just made and which is DELICIOUS. I'd been craving it the whole day at work, visualizing the sticky-sweet treat whilst prepping for court and salivating about it on my drive home. Luckily, it takes 5 minutes flat to make. Damn, a 5 minute-cake that tastes like it was baked for at least 30 minutes. Try it. Now! 

Since I have to put in my 2 cents-worth, you can obviously substitute the dates in the batter for other amazing ingredients such as apricots, nuts, chocolate or carob pieces, banana, apple and, of course, JELLY-TOTS. I also cut the amount of sugar in the batter from 2.5 tablespoons to 2.5 teaspoons and replaced the syrup with sweet molasses, which is supposed to be super healthy and which gives it a strong, toffee-like flavour.  

Anyway, you should definitely try this recipe out and have a look at the other food on her blog, because I can guarantee that you will be hooked from the first cyber-bite.

Fizzle-my-plug's-nizzle: Light Spinach Pasta with Tofu


I've been craving a variation of spinach and ricotta pasta for ages and stumbled upon a really quick and easy tofu and spinach pasta recipe on the Yummly site recently. It took me less than half an hour to make, I had tonnes of left-overs for the next day and it was delicious in a really simple and understated way. 

Two words of advice though; 1) don't put too much water in the blender with your spinach and; 2) let the steamed spinach and water cool down a bit before you blend it. 

If you don't follow the aforesaid advice you will, like me, end up with searing-hot spinach paste; 1) all over your face and; 2)on your rocking 3D picture of the Last Supper and; 3) in your electric plug sockets (which will start to  fizzle and burn and you will be told by whomever you live with that you've caused an electric fire which may burn the house down and you'll then have to trip the whole power-supply, unscrew the electric socket and try to blow-dry it without any electricity being supplied to your actual blow-drier.) 

But...don't let this dissuade you from trying the recipe, it is really worth a try and a taste!
